About twice a month is he flies out and leaves me and the cat to fend for ourselves. I could be sad about it, but that's not productive. Don't get me wrong, both the cat and I miss him. But he'll be back. And while he's gone we take advantage and eat stuff that he won't eat. Like thousand year eggs in congee. Or soft-boiled eggs and asparagus. Or braised duck tongue. Or sushi. You get the idea. I could eat this stuff while he's around too, but that would mean cooking two separate meals, and while I love to cook, I love my free time too.<br />

While he was gone this week then, with the FFwD recipe, my single girl meal treat was duck breast. I've always wanted to know how to cook duck breast but never got around to it, so I was happy to see this recipe come up. We are lucky to live in a neighborhood where we have a specialty <a href="http://letsmeatontheavenue.com/">English butcher</a>. I picked up a vacuum packed 1lb package of magret duck breast, which was enough for two. At almost $17/lb, I was glad not to have to buy another! It had been a loooong week at work and school, so I invited a friend/coworker over to share. Lisa brought some rosé and a loaf of fresh bread over, I mixed a couple of bourbon cocktails, and we nibbled on Comté cheese and home-made pepper jelly while throwing dinner together. Not bad for a weeknight!<br />

Before she arrived I roasted some cauliflower in the oven, and left it in the 250F oven while getting everything else ready. Please forgive the lack of a mise en place photo, or one of the duck breasts searing in the pot - Lisa and I were having such a good time chatting I just forgot! Besides, I'm not sure I could have taken a decent photo of the duck searing and fat rendering process. There was a LOT of fat spattering, despite the use of the cast iron casserole, and I ended up covering the pot with a splatter screen.<br />

Once the duck was seared, the rest of the process was very quick. Below is the balsamic vinegar and wine sauce coming together. I didn't have the port that Dorie called for, but I did have a bottle of French orange liqueur, Gran Gala, which is much less expensive and slightly sweeter than Cointreau or Gran Marnier. It was so sweet I figured it would be a good stand-in for port. We already know that duck and orange go together well, and with so much vinegar in the sauce, I wasn't worried about the sauce not pairing well with the peaches.<br />

I think I left the duck in the oven more than 5 minutes - probably closer to 10 - because my peaches were not that ripe and took longer in the pot, but they came out medium-rare and perfect. This was a delicious, quick recipe that I will definitely make again, although I would make sure to have riper peaches, and cut them into smaller pieces to make a more attractive plate in future. I complained, briefly, at the cost of the meat, but then the hubs pointed out that halibut or tuna is $21/lb at the market and we have that about once a month.<br />

The sauce was <i>outstanding</i>. For those of you who don't really drink port wine, I would recommend using a strong, sweet fruit liqueur as a substitute. Aside from being good looking, this pot really made the process a LOT quicker. This is due to two reasons. One, copper is a superior conductor compared to what you usually get in cooking pots (aluminum, steel). Second, the wide basin allows for quicker evaporation. These two features together mean that the jam was ready in about 1/3 less time than even when I used my lovely copper-core All Clad stock pot. As I had 15 lbs of cherries to can and it was about 101F outside, this meant that I did not heat up the house nearly as much, and it was waaaay less humid when the whole process was done. Copper pots are not an inexpensive proposition, but if you can afford one and can often, I highly recommend investing in one. To put it in perspective, it'll cost you less than a pair of designer shoes or handbag, and will last much longer.<br />

Dorie's tzatziki recipe came at exactly the right moment. We were going to have some friends over for dinner, and with our overabundance of basil, we came up with a "summer bounty" themed meal, with tzatziki and hummus for appetizers, a garlicky classic pesto as the main course, and an open-face fresh blueberry tart (from Rose Levy Berenbaum's incomparable recipe available <a href="http://www.epicurious.com/recipes/food/views/Open-Faced-Fresh-Blueberry-Pie-101866">here</a>) with meyer lemon curd for dessert.<br />

As an aside, this was our fifth or sixth batch of pesto this summer and it was the best yet. The secret? Pan sear the garlic in some olive oil before adding the whole shebang to the pesto, it makes all the difference!<br />

I'd never made tzatziki before and even had to look up how to pronounce it, but now I wonder why I hadn't. It's quick and easy to make from pantry staples - I had everything in the ingredients
list except for dill, which was easy enough to fix. I ended up only
dicing up 2/3 of a cucumber for 1 cup of yogurt; this was half the
amount of yogurt that the recipe called for, but I liked this ratio of
cucumber to yogurt better. The remainder of the cucumber I cut into finger-length sticks for inclusion in the appetizer plate with some carrots and celery. I kept the amounts of everything else in the
recipe the same, except the white pepper, which was to taste.<br />
<br />
As it's a shame to waste perfectly good zest, I also added lemon zest from the lemon that I juiced. One average-sized lemon gave me the 2 tablespoons of lemon juice the recipe called for as well as what I needed for the blueberry tart filling.<br />

There just happened to be fancy Greek yogurt in my fridge, but once the dip was mixed up, Dorie's instructions became obvious: if you are going to make tzatziki, please, please, <i>please</i> make sure you use only the best, thickest Greek yogurt you can find. Alternately you can thoroughly drain some good-quality yogurt. Otherwise the tzatziki ends up more like a watery mayonnaise, rather than a nice, thick dip, which is what you want. <br />

The hummus in the back is sprinkled with olive oil and some precious Israeli zaatar that my awesome friend Sarah brought back from Jerusalem for me. We didn't finish all the tzatziki that night, so I was able to taste it again a couple of days later, and yes, it does get better after the flavors have had a chance to meld together. I'll definitely be making more of this before the end of cuke season.<br />

Dorie was not kidding. This was a really, really, really soft and sticky dough. I kneaded that thing for 10 minutes and it still looked pretty much like the photo. As she had said that it should pull away from the bowl but still be soft enough to pool at the bottom of the mixing bowl, I ended up adding about another 1/2 cup of flour. It might have had something to do with my flour, which was made from hard spring wheat and therefore had less gluten.<br />

A photo of the mixings going in here. By this point both my husband and I were tired of hearing the mixer screaming, so I just mixed it in by hand. It was still tough work though - I wouldn't have wanted to "knead" this dough without a mixer. The consistency is such that the cook basically has to beat the dough like a batter, not actually knead it.<br />

I made the full recipe here, so these photos only show one of the two fougasses. As you can see, once spread out they are quite large. These are half sheet pans here. I thought it looked pretty much like the photo in the book - like a leaf, albeit a stubby one - but the hubs took one look and said it reminded him of Predator's face. I'm still trying to figure that one out.<br />

The hubs doesn't like savory things in his bread, so it's up to me to eat this whole thing (the other one went to our neighbors). Verdict? Not my favorite bread, although its perfectly good and the recipe works - I think I just can't help but compare it to focaccia, and then I decide that I like the richness of focaccia better. It's focaccia-like, but with so much less oil in the bread, it's less
tender and fragrant than actual focaccia, which is cooked in a sheet pan
full of olive oil. The crust is a little crunchy from the olive oil-water mix that is brushed on, and the inside chewy-tender. I had a bite of it today after it had sat out all night and it was still chewy and soft, which is nice. This week's French Friday recipe was Almond Flounder Meuniere, which Dorie described as an adaptation she made from the classic sole meuniere because flounder is easier for her to find at the market. I didn't feel too bad then with the decision I made when faced with a choice of sad-looking, pre-frozen, and badly thawed flounder versus plump, fresh tilapia at the fish counter today. Above is a photo of the finished product, served with a side of Spanish rice and green beans. <br />

The almond-flour coating was a breeze to make. I threw all the ingredients into my immersion blender mini food processor attachment and was good to go with a few whirs. Brushing on the egg with a brush instead of dragging the fish through a container filled with egg saved both extra eggs and cleanup.<br />

The butter-browning process is like toasting nuts. It can go from not quite ready to BURNED in the blink of an eye, so make sure to keep that eye on that butter! I got distracted and forgot, but thank goodness the hubs was there to remind me, because it looked like this when I looked again:<br />

Et voila! Below is an action shot of the hubs dropping some green beans inelegantly onto the plate. The beans were parboiled and then finished in the same butter that the fish cooked in. It worked out perfectly, creating a nice brown sear on the beans and did not require getting yet another pot dirty. We had begun the evening debating whether we were too tired to cook, or too tired to walk to a restaurant. The humid weather finally decided us in favor of staying home, and boy, are we glad we did. In the time it would have taken us to walk the ten blocks to a restaurant, we had a restaurant-quality meal at our own table.<br />

Anyways, I'm back now, and for a reason - I joined the scores of other cooks who dish it up every Friday on <a href="http://www.frenchfridayswithdorie.com/?paged=3">French Fridays with Dorie</a>!! I had purchased the <a href="http://www.amazon.com/Around-My-French-Table-Recipes/dp/0618875530">book</a> back in December to enjoy during our one-week staycation, after eying it longingly since before it was published (didn't think there was much point in buying another cookbook when I was working crazy hours and going to school). After a quick browning, the veggies go in the pot with some flour, tomato paste, herbs, and beef stock. Bring to a simmer, then stick in the oven and let the dutch oven do its magic.<br />

Apologies for the two pot photos. The second, post-oven shot was the last picture I took before we dug in, and I completely forgot to take a "plated" photo. Besides, stews are not particularly photogenic, and my photography skills are basic, to say the least, but trust me, the navarin was outstanding. A few years ago I tried making a sourdough starter by following instructions from the Laurel's Kitchen Bread Book. The starter went through all the textbook phases and was fine, but I was never happy with the bread that I made with it. Looking back, I was still too new to breadmaking, terrified of making any small mistake, and probably set my expectations too high (for myself and my bread). That, plus I couldn't bear throwing away all that starter every time I wanted to refresh it. This time, I am using instructions from Maggie Glezer's "A Blessing of Bread." Her starter instructions are the only ones I have come across that starts off by saying that she uses the minimal quantity of flour and water to reduce waste. Ahh...girl after my own heart! She also reassures her readers that organic flour, distilled water, and (after the starter is established) weekly feedings are all unnecessary, thus taking a lot of the expense and pressure out of the endeavor. I haven't posted here in almost a year. I don't know if any of you still check this site, but I figured I'd come and say hi to anyone who might be listening. I'm most of the way through my master's degree, exams and term papers are over, Boyfriend's been "kidnapped" for a family vacation, I've got the house to myself for a week, and for the first time in months I have free time on my hands. And I need an excuse not to start working on my dissertation right away. <br /><br />Since this is a food/craft blog, let me start by saying that bread in England is bland. Well of course bread is bland, you might say. It is bread. But the grocery store bread you get here does not even taste like bread. It tastes like...nothing. The white bread tastes like styrofoam. The brown bread tastes like cardboard. I gave up on grocery store bread and went to the local bakery. It was marginally better, but still tasted like a puffy matzo cracker. Compared to British bread, even the humble, standard Hong Kong "Garden" loaf is bursting with nutty aroma. I can't understand it. <br /><br />So now that I have free time, I've taken matters into my own hands and started making my own bread. I am operating under the general principle that the more egg, milk, butter, cheese and cinnamon (but not at the same time) I add my dough, the better. I have no idea how any of this works scientifically, but I don't care as long as it turns out anything but bland. Or burnt. Burnt is bad. <br /><br />I've got some whole grain-ish, eggy, milky, buttery dough rising right now, and I'll post pictures when it's done. <br /><br />Aside from the bread and the sausages (don't get me started on the sausages - ick), I am enjoying quite a lot of the food here in London. I can get so many ingredients that were rare or ridiculously expensive in Hong Kong. Like almond powder. Or whole wheat flour. And the yoghurt! It is so cheap and plentiful, I don't have to make it at home anymore. Boyfriend is in love with the cheese. I enjoy spending quality time with just a few people versus large groups, but because I also enjoy my "quiet time," it means that I am usually slow to make new friends. I am delighted to be able to say then, that I have two new friends - Liz and Kim - with whom to share my love for cooking and eating. It all started when Liz decided to pop in a DVD of Julie and Julia on a transatlantic flight. Liz hadn't been too enthusiastic about the movie but figured it would do for some mindless entertainment. You'd never have guessed that Kim and I had never met before this, and that the three of us had never been in a kitchen together before. We made an super team and got dinner out on time, in a good humor, and without any major snafus. It started raining at 12am and didn't stop all night. By late morning, the rain had turned into big, wet snowflakes. It was cold and messy outside, so I stayed home and made a stew and dessert. The plan <span style="font-style: italic;">had</span> been to start making candies for my holiday care packages, but it was too humid so it had to be cake instead. Well actually, a tart. An Austrian Linzertorte, to be exact.<br /><br />I love Linzertortes. I love to make them, because the results are a lot more impressive-looking than the actual effort - they are as beautiful as making a perfect lattice-top pie, but much quicker and easier. I love the way they taste, and I love that if I have any extra dough, I can make Linzer cookies with them. The recipes that didn't use ground nuts I passed on, because then I would just be making a spiced tart, not a Linzertorte. The nuts are usually what the store-bought versions skimp on too, which always makes for a huge disappointment. I don't have a food processor so I prefer to buy the nut flour. Almond flour is the easiest to find and least expensive. The large proportion of nuts to flour in the dessert makes the crust particularly fine and crisp-crumbly. While it's baking, the butter baking with the almond makes the most amazing sweet, rich, nutty aroma. Although the recipe is straightforward, the use of nut flour and almost a full jar of jam makes it a relatively expensive dessert to make, but oh, so worth it. I'm not sure why I haven't tried to make it up until now, considering that I've been experimenting with sorbet, but it was probably because I didn't know where to get rock salt. <br /><br />If I'd ever bothered to look, I'd have noticed that coarse sea salt is available in my local supermarket for pennies. <br /><br />So last weekend, I assembled a carton of milk, a bag of ice, some sugar, some vanilla flavouring, and some coarse salt. <br /><br />At first, I tried the ziplock bag method. That's where you put the milk with flavourings inside a small sealed ziplock bag, which is in turn placed inside a larger bag full of ice and salt. And then you shake it. And shake it some more. And shake it until your hands freeze. And then you put on some oven mitts, and shake it again. Until, supposedly, it turns into ice cream. Unfortunately, my arms got tired first. I decided that the ziplock bag method is a novelty stunt good only for entertaining small masochistic children. <br /><br />So then I dumped the partially frozen milk out into my rice cooker's pot (not having any other metal containers of the right size), and sat it in a mixing bowl full of salted ice. I stirred it first with a whisk, and then with a spatula, which was much less tiring. <br /><br />It's remarkable how cold the salt makes the ice - frost condensed from the air started forming on the surface of the outer bowl.<br /><br />Eventually, the mixture stiffened into something resembling a lumpy soft serve, and when it stopped getting any stiffer I tipped it into a container and put it in the freezer. <br /><br />And there I stopped. And the ice cream got very hard. It probably would've been a better idea to take it out and give it a stir every hour or so, like I do with sorbet. But it was still good. It tasted like those milk popsicles, and was even better with chocolate syrup. I used 2% fat milk, but whole milk or even heavy cream would have made a much richer ice cream. I think I might try making frozen yoghurt next. I've been on a roll lately, and this is my latest project - the second top I have ever designed completely from scratch. Well, not completely from scratch - I got the hem edging pattern from my stitch dictionary, Knitting Stitches by Mary Webb. <br />

When I started this project, I didn't know how it was going to look. I had a vague image in my head of a square neckline, and some patterning on the bottom edge, and knitting it in the round so there would be no seams, but other than that, I really had no idea. <br />

The white-and-red flecked yarn was another one of those discount balls from a Fa Yuen Street yarn stall... It appeared to be made of cotton, and thought that it would be enough for a tank top, but I was wrong. I ran out when I was nearly up to the armpits. <br />

So, it was time to find some more yarn. I knew I wasn't ever going to be able to match the colour, but I figured a colour change would look OK. I raided the yarn stores and found myself two balls of deep orange cotton, and another two balls of grey lace weight crochet string. I decided to knit both strands held together to make up the thickness. <br />

Cotton costs an arm and a leg! But no matter, I pressed on. <br />

And then, I knitted all the way up to the shoulders and found I'd miscalculated. My colour change was located at least an inch too high. It looked ridiculous, like a baby's bib. But I didn't want to frog it, so I carefully detached the top part from the bottom part, added a stripe, knitted up another inch of orange, and then painstakingly grafted the two halves back together. I can now say that I have taught myself how to graft ribbing. It was horrible. The only instructions I could find on the internet made no sense, and it was only by squinting very hard and exercising my full (but limited) mental capacity for rotational symmetry that I managed to figure out which way the yarn should be threaded when the knit stitches changed to purl. I'm thinking that organic chemistry majors would have a significant advantage over me in kitchener stitching. <br />

And then I got up to the shoulders, grafted <span style="font-style: italic;">those</span> together, and then I decided I wanted short sleeves. I'd been reading about knitting sleeves top-down in the round, by picking up stitches around the armhole, and using short rows to form the cap. I decided to give that a try. The hard part was trying to figure out to vary the steepness of the the short rows correctly, which meant trying to imagine what the sleeve would look like if it were spread out flat.<br />

First attempt - Sleeve too big and too wide. <br />
Second attempt - Added decreases. Sleeve no longer too wide, but now too short. <br />
Third attempt - Used steeper gradient. Sleeve longer, but had excess material bunching around the armpits. <br />
Fourth attempt - Added decreases around the armpits. Sleeve looks OK. Except yarn has been frogged so many times, it's starting to look a bit manky. Oh well.<br />

I got the wavy scalloped pattern out of a stitch dictionary, and just kept going, and going, and going. This is definitely the last time I will ever make a poncho. I began it in August and finished it in early December; I think my brain was starting to melt towards the end.<br /><br />At least I used up all my grey acrylic yarn. Now I can load up on more interesting ones, yay. <br /><br />By the way, acrylic doesn't have to be stiff and nasty. It softened up nicely after being blocked under a hot steaming iron, and acquired a lovely drape. The pattern holds its shape, it's machine-washable, and won't ever need to be blocked again. In a household where wool sweaters periodically get shrunken in the wash, this is a good thing. <br /><br />My mom seems to like it a lot. I feel I've been given a military fighter jet to travel 2 blocks to the grocery store, and I'm sitting in cockpit staring at the controls going, "Okay, what do I do now?"<br /><br />I can theoretically see why some people would need all those features (Lana, how does your stash fit in your house?) but I'm as basic as basic gets. My entire yarn stash fits into a single plastic shopping bag, I don't plan projects far in advance, I don't have a pile of works-in-progress, and I don't collect patterns for future use. My entire process consists of picking up some discount-bin yarn, going "I think I'll make a hat this week", Googling around a bit, and then pretty much winging it. <br /><br />It's going to take me a while to figure out how this works.<br /><br />I've managed to upload a picture and details of one project so far, and am trying to figure how to submit patterns. (Apparently it takes a couple of weeks to get approved). Guess I'll be hogging Boyfriend's digicam for the next couple of days, documenting my past projects. I lost most of my old photos in the Great Hard Drive Crash of 2008. I originally got it out of a microwave cookbook my aunt gave me years ago, memorized it, lost the original recipe, forgot it, half-remembered and half-improvised it, tweaked it, substituted plain flour for cake flour, took out some baking powder, fudged the oil-to-milk ratio, put back some baking powder, found a better way of mixing it, and finally I'm happy with it. <br /><br />It doesn't taste of baking powder, it rises a good amount, it doesn't collapse into a pancake on the bottom, it isn't dry, and it isn't lumpy. <br /><br />It is so smooth and so fluffy and so moist. Just like the cupcakes you get from Chinese bakeries. I suppose it's not even a true sponge cake because it contains egg yolk and oil, but it sure tastes like one. Any food scientist care to explain why the addition of fat doesn't seem to collapse the air out of it?<br /><br /><span style="font-weight:bold;">Recipe:</span><br /><br />Ingredients:<br /><br />3 eggs - separate the whites and yolks, keep the yolks<br />1/2 cup sugar<br /><br />1 1/4 cup plain flour<br />2 tsp baking powder<br />1/4 tsp salt<br /><br />1/2 cup milk<br />1/4 cup vegetable oil<br />1/2 tsp vanilla essence (or 1/4 tsp vanilla extract)<br /><br />Instructions:<br />1. Preheat oven to 180 degrees celsius<br />2. Whisk egg whites and sugar together until stiff peaks form<br />3. In separate bowl, sift flour, baking powder, and salt together. <br />4. I managed to buy half a metre of black fleece on sale, and used it to line my curling stockinette scarf. Thanks to MooCow for the tip on TechKnitting - the instructions for sewing knitting to fleece were great. It came out a bit wobbly, but still good.<br />

It took foreeeeeever. I mean, Hole E. Cow. I made that scarf way too long - when I wrap it round my neck it dangles almost to my knees. I've learned my lesson. Never will I knit a scarf in stockinette again. It's not like there's any intricate detail on this one.<br /><br />The fastening is a hair bobble tie that I picked up in Mong Kok for pocket change. I originally wanted to use one of those gigantic goofy-looking safety pins, but I couldn't find one. <br /><br />I'm actually quite pleased with the way I fit the sleeves. The last time I tried to improvise a sweater (several years ago), I got the armhole and sleeve shaping a bit off and the material bulged out a bit strangely from the shoulder.
